Dried Brewer’s Yeast: This is an inactive and dry yeast produced by cultivating the fungus Saccharomyces cerevisiae. It is primarily used for leavening bread and pizza dough. Dried brewer’s yeast works through alcoholic fermentation, where bacteria consume the sugars present in the dough and produce carbon dioxide and ethyl alcohol, causing the dough to rise.

Sourdough Starter: Sourdough starter is a natural yeast obtained from the spontaneous fermentation of flour and water. It can contain a wide variety of bacteria and yeasts, giving it a characteristic flavor. Sourdough starter is mainly used for preparing bread and other baked goods. Compared to dried brewer’s yeast, sourdough starter requires a longer fermentation process but imparts a unique flavor and texture to the dough.

Chemical Yeast: Unlike the two previous types, chemical yeast is a chemical leavening agent primarily used in the preparation of cakes and baked goods. Chemical yeast is typically sold as a white powder and contains baking soda, an acid (usually cream of tartar), and a drying agent (such as cornstarch). When chemical yeast is mixed with wet ingredients, it reacts to produce carbon dioxide, which causes the dough to rise. Chemical yeast acts very quickly and does not require a long fermentation process like dried brewer’s yeast or sourdough starter.
